● A food employee was touching utensils pans and other items with their bare hands.

● A splash guard is needed so water from the hand washing sink doesn't splash over onto food work areas.

● Clean utensils were in dirty storage bins.

● Two wipe cloth buckets had little to no sanitizer.

● There were two instances of there being an air gap between a plumbing fixture and a piece of equipment that was not sufficient to prevent back siphonage of contaminated water.

● Person in charge did not ensure their employees are properly trained in food safety. More training was needed regarding temperature controls-including calibrations, sanitizer strengths-labels, and hand washing.

● Working utensils and cutlery were not stored in a sanitary manner.

● Knife rack was dirty.

● A compartment sink had no sanitizer.

● There was buildup inside an ice machine.

● Bins holding measuring spoons and cups had debris in them.

● The hand washing sink was not easily accessible.

Eat at Oasis Pizza & Grill, 3303 Dorr, inspected Aug. 10.  

● A manager/​person in charge was moving from one working station to a different working station without washing hands or changing gloves.

● The person in charge was was not able to demonstrate proper knowledge of food temperature and also did not have a food thermometer when asked.

● There was no sanitizer solution at the person in charge’s working station and also, the sanitizer solution by the make line station was dirty.

● All food items in a prep top cooler were not being held at the proper temperature.

● There were no date markings on cooked gyro meat, cooked potato, or cooked chicken inside walk-in and reach-in coolers.

● Cooked rice in pans was not being cooled properly inside a walk-in cooler.

● Chemical sanitizer was not diluted in spray bottles.

Church’s Chicken, 5 S. Reynolds, inspected Aug. 10.  

● The person in charge did not ensure their employees are properly trained in food safety. They need more training on temperature controls, no bare hand contact, and sanitizer verifications.

● Some employees were touching items with their bare hands.

● Cut bagged lettuce, cooked gravy, and shredded cheeses were not properly date marked.

● A sanitizer bucket did not have the required about of quaternary ammonia.
