Adam Russell, an associate buyer for The Andersons, left, gets some guidance from Jacob Bulitz, center, as Mr. Russell and Lesley Kruzel, deli and seafood buyer for The Andersons, right, flip slabs of cheese during the cheddaring process at the Henning's Wisconsin Cheese factory in Kiel, Wisconsin. The cheese is poured into a holding container and as it solidifies it needs to be cut, flipped and stacked so it can condense into drier curds. Employees flip each side, which weighs roughly 2,000 pounds, six times between when the cheese is poured out until it's ready to be bagged.
