Spring is about to, well, spring. So let’s start weaning ourselves from heavy, hearty casseroles and start enjoying lighter dishes with seasonal colors and flavors.
This easy salmon with greens is one of the fastest dinners we’ve offered: If you include the time required to assemble the ingredients, it will take you a whopping 20 minutes.
While this is a healthful meal with fish and dark leafy greens, it isn’t boring in the slightest. Sweetness and some heat (which you can increase, if desired, with spicy mustard and red pepper flakes) are ready to entice your palate.

Maple Mustard Salmon with Garlicky Greens
1 6-ounce salmon filet
1 tablespoon mustard (Dijon, brown, or hot)
1 tablespoon maple syrup
3 tablespoons candied pecans, finely chopped
1 tablespoon oil
2 large garlic cloves, minced
Pinch of red pepper flakes
3 cups mixed greens, chopped (mustard, turnip, collard, spinach, kale)
Salt and pepper
Rice for serving, optional
Preheat the toaster oven to 350F. Grease a small baking dish.
Place the salmon filet, skin down, into the baking dish. Mix the mustard and maple syrup in a small bowl, then brush this onto the fish. Sprinkle the pecans over the salmon and gently press in place.
Bake for 12 to 15 minutes, until the fish is tender and just medium-rare.
Meanwhile, heat the oil in a large skillet or saucepan over medium heat. Add the garlic and red pepper flakes; sauté for 1 minute. Add the greens along with salt and pepper; sauté until just wilted.
Serve the fish alongside the greens, with rice on the side if desired.
